Chicken fajita rollup & kidney beans
2 tbsp olive oil
1/2 juice of lime
1 minced garlic clove
1 tsp chili powder
1/2 tsp cumin
1/2 tsp dried oregano
1/2 tsp salt (not required)
Pinch of cayenne
2 tbs chopped cilantro

Cut (3) chicken breasts in half and tenderize to approx 1/4 inch
Place chicken and marinade in large ziplock bag and let sit for at least an hour (the longer the better)

Once marinaded stick 6 slices of bell peppers (I used red, yellow and orange) in the chicken and roll up. Hold together with a toothpick and place in baking pan with the seam down. 

Bake on 375 for 30 minutes.
